Ingredients :
1 medium white cabbage (about 800 g), minced
2 medium carrots, peeled and cut into slices
1 large onion, chopped
2 cloves garlic, finely chopped
1 red pepper, seeded and diced
4 ripe tomatoes (or a can of crushed tomatoes), diced
1.5 liters of vegetable broth (house or cube)
2 tablespoons Olive oil
1 teaspoon dried marjoram
1⁄2 teaspoon dried thyme
Freshly ground salt and black pepper
Fresh parsley or aneth (optional)
A pinch of chili pepper (optional, to enhance the taste)
Preparation :
In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and fry until it is translucent and tender (about 5 minutes).
Add the chopped garlic and fry it for 1 more minute, taking care not to burn it.
Add the chopped carrot and pepper. Cook for another 5 minutes, stirring occasionally.
Add the chopped cabbage and fry for a few minutes, until it is slightly tender.
Pour the vegetable broth. Add the crushed (or canned) tomatoes, dried marjoram and thyme. If you like spicy dishes, add a pinch of chili pepper.
Bring to a boil, then lower the heat, cover and simmer for 25 to 30 minutes, until the cabbage is tender but still slightly firm.
