Creamed Peas on Toast (Depression-Era Comfort Food)

Instructions

  • Cook peas in lightly salted water until tender; drain and set aside.
  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  • Slowly whisk in milk and cook until thick and smooth.
  • Season with salt, pepper, and nutmeg if using.
  • Fold peas into the sauce and warm through.
  • Spoon generously over hot toast and serve immediately.
