Best Banana Bread Recipe

Banana bread is a beloved, timeless treat that’s perfect for breakfast, dessert, or even as a snack. It’s moist, flavorful, and packed with the comforting sweetness of ripe bananas. This recipe is simple and delicious, featuring the perfect balance of rich butter and natural sweetness from the bananas. It’s an excellent way to use up overripe bananas and turn them into something irresistibly delicious.

Ingredients:

  • 1/2 cup unsalted butter, at room temperature – Butter is key to making the banana bread rich and moist. Make sure it’s soft before starting, as this will help it cream with the sugar to give you a smooth batter. If you prefer, you can use vegetable oil as an alternative for a slightly lighter version, but butter will give you the best flavor and texture.

  • 1 cup granulated sugar – Sugar adds sweetness and moisture. If you want to reduce the sweetness a bit, you can swap out half of the sugar with brown sugar to give the bread a deeper, caramel-like flavor.

  • 2 large eggs – Eggs help bind the ingredients together and contribute to the overall structure of the bread. They also add moisture and richness to the banana bread. Ensure the eggs are at room temperature for optimal mixing.

  • 2 cups all-purpose flour – This is the base of the bread. If you want a denser, heartier texture, you can use whole wheat flour instead of all-purpose. However, all-purpose flour will give the bread the perfect texture and lightness.

  • 1 tsp baking soda – Baking soda is the leavening agent in this banana bread. It helps the bread rise and achieve a light, fluffy texture. Make sure the baking soda is fresh for the best results.

  • 1/2 tsp salt – Salt enhances the flavors and helps balance the sweetness of the bread. It also helps the baking soda work more efficiently, ensuring a good rise.

  • 3-4 medium bananas (or 2 large bananas) – Bananas are the star of this recipe. Overripe bananas work best because they are sweeter and easier to mash. The riper the bananas, the more natural sweetness and moisture they’ll provide to the bread.

  • 1 tsp vanilla extract – Vanilla extract adds depth and enhances the flavor of the banana bread. You can opt for almond extract for a slightly different flavor profile, or even add a pinch of ground cinnamon or nutmeg for some spice.

Instructions:

Step 1: Preheat and Prepare Pans

  • Preheat your oven to 350°F (175°C). Line two 8×4 bread pans with parchment paper, or if you don’t have parchment, generously grease the pans with butter or baking spray to ensure the banana bread comes out easily after baking.

Step 2: Mash the Bananas

  • In a medium-sized bowl, mash the bananas with a fork or potato masher until they are smooth and free of lumps. The more mashed they are, the more easily they’ll blend into the batter. Set the mashed bananas aside for later.

Step 3: Cream Butter and Sugar

  • In a separate large mixing bowl, add the unsalted butter and granulated sugar. Use a hand mixer or a standing mixer on medium speed to cream the butter and sugar together until the mixture is light, fluffy, and pale in color. This process helps incorporate air into the batter, which gives the banana bread its light texture.

Step 4: Add Eggs

  • Add the eggs one at a time, mixing each egg in fully before adding the next. Continue creaming the mixture until smooth and well-combined. This ensures that the eggs are properly incorporated into the batter, helping to hold everything together while it bakes.

Step 5: Mix in Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the creamed butter and sugar, mixing just until everything is combined. Avoid overmixing the batter, as this can lead to a denser loaf.

Step 6: Add Bananas and Vanilla Extract

  • Fold in the mashed bananas and vanilla extract into the batter. The bananas will make the batter a little thicker, but don’t worry – this is completely normal. Stir just enough to ensure the bananas are evenly distributed.

Step 7: Pour the Batter into Pans

  • Divide the batter evenly between the two prepared bread pans. Use a spatula to smooth the tops of the batter in each pan.

Step 8: Bake

  • Place the bread pans in the preheated oven and bake for 35-40 minutes, or until the top is puffed, golden brown, and a cake tester (or toothpick) inserted into the center of the loaf comes out clean. If the tops of the loaves begin to brown too quickly, loosely cover them with aluminum foil for the last 10 minutes of baking.

Step 9: Cool the Bread

  • Once the bread is done, remove it from the oven and allow it to cool for 5-10 minutes in the pan. After it has cooled slightly, carefully remove the banana bread from the pans and place them on a wire rack to cool completely. This step helps prevent the bread from becoming soggy.

Step 10: Serve and Enjoy

  • Once cooled, slice the banana bread into thick, hearty slices. Serve it warm, at room temperature, or chilled. It’s perfect on its own or spread with a little butter, peanut butter, or even a drizzle of honey for an extra treat.
